Vegan Basil Pesto


  • ¾ cup raw cashews
  • 1/4 cup olive oil
  • 5 – 6 cloves garlic
  • 4 Tbsp nutritional yeast
  • 2 tsp black ground pepper
  • 1 bunch fresh basil leaves
  • 1 pinch of salt to taste
  • almost 1 lb of fresh spinach

Gradually mix the cashews, olive oil, garlic, nutritional yeast, pepper, basil and salt in a food processor, and process until smooth.  Add half of the spinach and process. Add the rest of the spinach and finish processing.

Serve, refrigerate, or freeze.
